Monday Funday!

Happy Monday!

Over the last few month my better half and I have been trying to eat healthier and cleaner, which tends to mean more home cooked meals. This also means that we have gotten creative when it comes to cravings. The most recent "have to have meal" was pasta... good old fashion spaghetti specifically. I can't remember the last time I've had pasta... because let's be honest, pasta is not looked highly upon by my trainer. Any who... since we had to have it... I figured out a way to make it in a way that not only we can have, but that is also scrumptious.

Here is what I came up with...

Spinach Fettuccine with Ground Turkey Bolognese

This was super simple but absolutely delicious dish. I don't know if it is necessarily healthy per say.... but I will say that it was much healthier than the traditional dish. The meat sauce was hearty and flavorful, and the spinach pasta I used really sealed in the yumminess. Granted the fettuccine I used was more expensive at $4 a bag, but it was totally worth it.  A lot of people steer clear of nontraditional pasta's because they worry that the flavor or texture will be bad, but this combination totally hit the spot.

You should definitely give it a try. Here's the recipe...

Michelle's Healthier Spaghetti

Ingredients:

1 bag Spinach Fettuccine
1 package ground turkey
1 green bell pepper, chopped
1 small onion, chopped
1 jar of your favorite spaghetti sauce
2 Tbs olive oil
White spice to taste
Michelle's essence to taste

Instructions:

  • Bring a pot of water to boil and cook pasta according the package instructions. Be sure to add salt and 1tablespoon of olive oil to the water.
  • In a large skillet add 1 tablespoon of olive oil over medium heat and add peppers and onions. Cook until onions are translucent.
  • Push  vegetables to a far corner of your pan to make room for the meat. Add turkey meat and season with white spice and Michelle's essence and cook thoroughly.
  • Once turkey is cooked combine the vegetables back in and add your tomato sauce.
  • Taste and adjust seasoning once heated.
  • Serve turkey bolognese over pasta and grate fresh Parmesan cheese on top.
  • Enjoy!
