What's for dinner: Turkey Day Food Coma!

How was your Thanksgiving?? Mine was fantastic. We went from just a simple holiday meal for myself and my better half to dinner for FIVE! No worries though, I always make more than I need so there was plenty to go around. Plus my dear gay husband and his friends brought over some delish Thanksgiving goodies as well.

Here's what we had:
(From the top left: Cranberry sauce, Brown sugar Ham, Green bean casserole,
Gravy, Turkey, Cranberry Sage Stuffing, Cornbread, and my world famous Macaroni and Cheese.)
And I thought we wouldn't have enough food!

Midweek eats: Thanksgiving Turkey Brine Bath

Good morning fellow foodies!!

I hope your turkeys are enjoying their 'brining baths'! I know mine is! Since I am only cooking for 3 people, I decided to go with a breast (bone in) and a few wings. Nonetheless, it still needs brining. Here's what I put in my turkey's brine bath:

Thanksgiving Turkey Brine Bath

1½ cartons of Chicken stock
enough water to cover the turkey (a little less than a gallon)
½ cup of sea salt
½ cup of brown sugar
¼ cup of black peppercorns
4 garlic cloves
handful of thyme
handful of sage
handful of parsley stems
a few handfuls of ice

What's for Dinner: A Veteran's favorite meal

Happy Veteran's Day!

I want to start today’s post by saying thank you to all the men and women who have served or are currently serving our country. One Vet in particular, my Dad. For those of you that don’t know I’m an Army Brat… my Father served for 20 years. In honor of him and all the other Vet’s out there I wanted to post the recipe for his favorite meal. Just one problem… what is his favorite meal??? My Dad is one of those Dad’s that LOVES everything. Then again when you have spent years eating MRE’s and Chow hall food, you appreciate the good stuff. Anyhow, after talking to him, he said if he had to choose one meal it would be Spaghetti.

Spaghetti!

Monday Funday!

Happy Monday!

Over the last few month my better half and I have been trying to eat healthier and cleaner, which tends to mean more home cooked meals. This also means that we have gotten creative when it comes to cravings. The most recent "have to have meal" was pasta... good old fashion spaghetti specifically. I can't remember the last time I've had pasta... because let's be honest, pasta is not looked highly upon by my trainer. Any who... since we had to have it... I figured out a way to make it in a way that not only we can have, but that is also scrumptious.

Here is what I came up with...

What's for Dinner??

Hello fellow foodies!

It seems like Fall has finally arrived to our beloved city. While the North East is being pummeled by the first snow storms of the season we are freezing in our perfectly sunny skies and 60 degree weather. Go figure! What can I say; you get spoiled by the heat! Nevertheless, the fall season is all about delicious hearty soups, stews and other comfort foods. So, what better way to kick off the 'cold' than with one of my favorite soups, Julia Child's Leek and Potato soup.
