Midweek Eats: Yummiest Spinach Dip of all time

Happy Hump day!

As promised, I have something super yummy for you all today. I dug into my arsenal of very, very delicious and very, very popular recipes and what I decided to share with you guys is…

(drum roll please)

My famous Spinach dip!

My loved ones and friends will tell you how yummy (and addictive) this dip is…. it is cheesy and creamy and prefect, especially with the crunchy crostini that I serve with it. It’s easy to make and it is a huge crowd pleaser, so give it a try and let me know what you think!

Here is the recipe…
Spinach Dip


1 bag fresh spinach
8oz Sour Cream
8oz Cream Cheese
5oz Parmesan
5oz Manchego Cheese (Find it at local grocery stores, but Dekalb Farmer’s Market has the best price. This one will have to be purchased by the wedge and shredded at home.)
1 Tbs Olive Oil
1 Tbs Old bay
Salt/White Pepper to taste


  • In a pot over medium-low heat, add sour cream and cream cheese- mix and allow to heat until melted.
  • While you wait for the sour cream and cream cheese to come together grab a sauté pan and heat the olive oil over medium heat and drop the spinach in, be sure to sprinkle with salt and pepper—toss until wilted (2-4 minutes).
  • Once the sour cream and cream cheese is melted add the shredded Parmesan and Manchego cheese. Mix thoroughly to incorporate.
  • Once the cheese is incorporated add your sautéed spinach, mix well.
  • Season with old bay and salt/white pepper—be sure to taste and adjust seasoning as needed.


1 French baguette
1 tsbp minced garlic
½ paprika
½ dried parsley
½ onion powder
½ garlic powder
½ cup olive oil


  • Preheat your oven to 350 degrees.
  • Slice baguette
  • In a shallow bowl mix all the spices/herbs and the olive oil
  • Dip each slice of bread in the mix coating with olive oil and spice mix
  • Bake in oven for 6-8 minutes until golden brown
  • Serve along side the Spinach dip for dipping and enjoy!
